La permanence des localisations, tr\u00e8s forte dans les communes p\u00e9riph\u00e9riques, est moins nette dans la commune centre. L\u00e0, quelques changements significatifs sugg\u00e8rent une adaptation de la g\u00e9ographie des march\u00e9s aux processus de densification et de renouvellement urbain. Toutefois, les mutations qualitatives sont partout \u00e0 l\u2019\u0153uvre : plusieurs march\u00e9s, de petits formats, s\u2019affichent comme des march\u00e9s bio ou march\u00e9s de
